Chocolate Pomegranate Mousse Cups
This rich and creamy dessert is quick and easy
18 disposable shot glasses
Brownie mix, or ingredients
3 cups of Rich’s Whip
1 cup of good quality baking chocolate
(I recommend Alprose.)
The seeds of one pomegranate
2 piping bags – only one fitted with star tip.
Brownie Layer: Use your favorite brownie mix or brownie recipe. Prepare recipe as instructed. Bake on a cookie sheet for a flatter brownie that can be cut with a cookie cutter.
1 cup of whip cream un-whipped
1 cup of good quality chocolate
In a saucepan on a small flame, simmer chocolate and whip together for 4 minutes, stirring constantly. Shut the flame and set the chocolate aside to cool.
2 cups of rich whip
1 cup of prepared ganache
In an electric mixer, whip the cream. Set aside half a cup of whipped cream for garnish. At this point, you can put the whip cream in a piping bag fitted with a star tip. Leave it in the fridge until it’s ready to be garnished.
To the remaining cream, add 1 cup of prepared ganache and mix until it becomes mousse.
Fill the piping bag with mousse.
Seed the pomegranate. Remove any peels from seeds.
1.Line up a set of miniature shot glasses. With a small round cookie cutter, cut out brownies.
2.Place brownies on the bottom of the shot glass.
3.Spoon in half a teaspoon of ganache.
4.Spoon in a teaspoon of pomegranate seeds.
5.Pipe mousse on top of the pomegranate seeds.
6.Spoon in another layer of ganache.
7.Pipe a small star of whipped cream on top of the ganache.
8.Garnish with a dab of ganache on top and some pomegranate seeds. Refrigerate and enjoy!
Yields: 18 miniatures shot glasses
Try very hard to keep your cups neat and clean while assembling, because everything can be seen from the outside of the cup and you want it to have a clean, professional finish.
To seed the pomegranate easily, bang on the pomegranate with a small rolling pin before opening it. This will loosen the seeds.
If you want to freeze these mousse cups, add pomegranate seeds for garnish after defrosting. Otherwise they will stain the cream in the freezing process.
