Utensils Needed:

Mixing bowl

Measuring cups
and spoons

Large spoon

Oven mitts

Electric mixer
with bowl


3 (8 ounce) containers pareve
cream cheese, room temperature

1 (8 ounce) container pareve
sour cream, room temperature

1 ½ cups sugar

4 eggs

1 tablespoon vanilla extract

Zest of 2 limes

Juice of 3 limes

2 (9 inch) graham cracker pie crusts

Let’s Get Started!

1   Preheat oven to 300 degrees.

2   Place cream cheese and sour cream in bowl of electric mixer;
     beat until smooth.

3   Add sugar and beat 1 minute.

4   Add eggs, one at a time, beating after each addition.

5   Add vanilla extract, lime zest, and lime juice.
     Beat until combined.

6   Pour batter into pie crusts.

7   Bake 1 hour and 10 minutes.

8   Turn off oven and let cake cool in oven for 20 minutes.

9   Refrigerate. Serve cold.

A Top-Secret Citrus

The use of citrus from limes was initially a closely guarded military secret, as scurvy was a common disease of various national navies, and the ability to remain at sea for lengthy periods without contracting scurvy was a huge advantage for the military.
