1-2 lbs salmon, cut any way you like it

Fish seasoning, for sprinkling (We used Old Bay, but any spice mix you like for fish is fine)

1 ripe but firm avocado, diced

Glazed nuts, for sprinkling. (We used Sahale Tangerine-Almond Nut Mix. See notes)

Mango Sauce:

1 ripe mango

2 tablespoons coconut milk (any type is fine)

1-2 tablespoons lemon juice

  1. Preheat oven to 400F.
  2. Spray fish with nonstick cooking spray, then sprinkle generously with fish seasoning (sprinkle with salt too if your seasoning mix does not include it). Bake for 15-20 minutes, depending on the size of your fillets.
  3. Meanwhile, prepare mango sauce. Blend mango, coconut milk, and lemon juice.
  4. To play the dish, place fish on plate. Scatter diced avocado all other. Drizzle with mango sauce and sprinkle with nuts. Enjoy!

About the Nuts:

A bit about the ingredients. I think the avocados and mango don’t need elaboration, but we must tell you about the nuts used here. We first picked up Sahale Snacks nut mixes at Wegmans just because they looked interesting and loved them. The company makes lots of flavors of original nut mixes, but we used the Tangerine and Vanilla Macadamia Nut and Cashew Nut Mix (also available at Target and on Amazon for greater accessibility). Having these kinds of tricks in your pantry just make it easy to present gourmet dishes with less work!

About the Presentation:

We showed this in nice, neat squares which work greater for a main or plated appetizer. Ask your fish store to prepare the salmon cut to the size and shape that you want it. Want to serve it on a buffet or as an hors d’oevre? Ask the fish store to prepare your salmon in 1 to 1 ½ inch cubes. Drizzle your platter with mango sauce (drizzle more after). After baking, skewer the cubes and place them on the platter. Sprinkle with diced avocado and nuts. You can also serve the salmon cubes in miniware. Use a piping mag to add mango sauce to the small dish, then insert skewered salmon and top with avocado and nuts.
