CLASSIC BURGERS

It’s burger season! Time to break out the grill or cast-iron pan, and get your summer started. Spending time with the family with a backyard BBQ is the ultimate summer activity. In its simplest form, all you need for a burger is a meat patty and a bun. Purists insist that a burger should contain no fillers. No eggs or breadcrumbs. Just well-seasoned beef with the right amount of fat to keep it moist and prevent it from drying out. It’s not too hard to upgrade your bun with some lettuce, tomato, onion, garlic mayo, or even a fried egg. The messier, the better! Sometimes you just need to ditch the cutlery and fancy plates and just dig in and enjoy. Isn’t that what summer is all about?

INGREDIENTS:

Burger:

2 lbs. ground beef

2 tsp. Kosher salt

1/2 tsp. black pepper

Toppings:

Lettuce

Tomato slices

Sautéed onions

Fried eggs

Herbed Dressing:

1 cup mayonnaise

1 tsp salt

1 tbsp sugar (or 1 packet artificial sweetener like stevia)

1/2 cup fresh parsley (or 4 cubes frozen)

1 tbsp mustard

3 tbsp lemon juice

2 cloves garlic, minced

Zucchini Fries:

3 zucchinis

2 cups corn flake crumbs

2 tsp garlic salt

1 cup canola oil

Makes 8 Burgers!

Directions:

Zucchini Fries

  1. Preheat oven to 375 degrees.
  2. Wash and slice zucchini into thick strips, French fry style.
  3. Prepare two bowls. In one bowl, pour the oil, and the other place the corn flake crumbs and garlic salt.
  4. Dip each zucchini stick once in oil and once in the cornflake mixture.
  5. Bake uncovered on a sheet tray for 40 minutes.

Burger

  1. In a large bowl combine beef, salt, and black pepper just until combined. Do not over-mix or burgers will be tough.
  2. Divide meat mixture into 8 equal portions Shape each into a tight ball and flatten the ball into a disc. Make it thinner in the center. Any burgers you are not using immediately can be frozen for later.  Just use plastic wrap, parchment paper or wax paper to separate the layers.
  3. Cook immediately over grill or cast-iron grilling pan, 3 to 5 minutes on each side, depending on preference.
  4. Mix all dressing ingredients in a food processor or mix well by hand.
  5. Lightly toast your bun and spread the herbed dressing on the buns.
  6. Top with the burger, lettuce, tomato, sautéed onion and fried egg. Enjoy immediately!
