Wondering what to make for your Purim seuda? These bite-size, Purim-themed, and savory
hamantashen are sure to be your favorite new recipe you’ll make year after year. No need to
wait till next Purim to have these again though, this recipe can also be made year-round! Just
skip the step of cutting circles from the dough and fold the chicken filling into a triangle shape
instead.


Ingredients:
36 mini puff pastry squares
4 chicken thighs with skin
1 tbsp. salt
½ tsp. black pepper
1 cup sun-dried tomatoes, chopped fine
¼ cup pine nuts
3 tbsp. basil pesto
1 egg, beaten

Everything seasoning spice

Makes 36 hamantashen!

Directions:
1. In a large tin or Pyrex, place chicken and sprinkle with salt and black pepper. Bake
covered at 350 degrees for 45 minutes.
2. When chicken is cooked, remove skin and shred into small pieces.
3. Place shredded chicken in a bowl with pesto, pine nuts, and sun-dried tomatoes and set
aside.
4. Use a round cookie cutter or a glass cup to cut circles out of the puff pastry squares.
5. Place about 1 tbsp. of chicken filling inside each circle and pinch on three sides to make
a hamantash shape.
6. Brush outside of puff pastry dough with egg, and sprinkle with everything seasoning
spice.
7. Bake at 350 degrees for 15-20 minutes.
8. Serve warm.
