Ingredients
1 cup rolled oats
1/2 cup peanut butter (or any other nut/seed butter)
1/3 cup honey or maple syrup
1/4 cup mini dairy-free chocolate chips
1/2 cup shredded coconut (divided: 1/4 cup in mixture, 1/4 cup for coating)
1/4 cup chopped nuts or seeds (optional)
1 tsp vanilla extract
Let’s Get Started!
- In a mixing bowl, combine oats, peanut butter, honey (or maple syrup), chocolate chips, 1/4 cup shredded coconut, nuts/seeds (if using), and vanilla extract. Stir until everything is well mixed.
- Use your hands (or a small cookie scoop) to roll the mixture into small balls, about 1 inch in diameter.
- Spread the remaining 1/4 cup shredded coconut on a plate. Roll each energy ball in the coconut until lightly coated all around.
- Place the coated balls on a tray or plate and refrigerate for at least 30 minutes so they firm up.
- Store & Serve: Keep in an airtight container in the fridge for up to a week.
