This Moroccan red lentil soup is one of those recipes that is simple, filling, and full of flavor. It uses basic, everyday ingredients that come together to make a hearty, high protein soup that is both nourishing and satisfying. The cumin adds a warm, savory flavor, and the lemon stirred in at the end gives the soup a fresh finish. It’s the kind of soup that feels just right on a cool fall day, when you want something warm, hearty, and comforting.
Ingredients
1/4 cup canola oil
4 onions, chopped
5 carrots, peeled and chopped into small pieces
6 stalks celery, leaves and stems removed and chopped into small pieces
2 tablespoons cumin
6 cloves garlic, minced
Salt and pepper to taste
3 plum tomatoes, finely chopped
6 oz can tomato paste
12 cups water
16 oz bag red lentils, rinsed
1 can chickpeas, drained
1/2 cup lemon juice
Lemon wedges, for serving
Fresh parsley, chopped, for serving
Directions
- Heat the canola oil in a large pot over medium heat. Add the onions and sauté for 5 to 10 minutes, until golden.
- Add the chopped celery and carrots. Cook for about 15 minutes, stirring occasionally.
- Add the cumin, garlic, salt, and pepper. Mix well and cook over low heat for another 10 minutes.
- Add the chopped tomatoes, tomato paste, 12 cups of water, and rinsed red lentils. Stir well and add more salt to taste.
- Bring the soup to a gentle simmer, then cook over low heat for 25 minutes, stirring occasionally.
- Add the drained chickpeas and cook for another 5 minutes.
- Turn off the heat and stir in the lemon juice.
- Serve hot with lemon wedges and fresh chopped parsley, if desired.
